Classic Tiramisu

Tiramisu literally means "pick me up" or "lift me up" in Italian, and this dessert certainly lives up to its name. The combination of strong espresso, rich mascarpone cream, and the bittersweet dusting of cocoa creates a dessert that is simultaneously light and indulgent.

Ingredients

  • 6 egg yolks
  • 150g granulated sugar
  • 500g mascarpone cheese, at room temperature
  • 300ml heavy cream
  • 300ml strong espresso, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 300g Savoiardi (ladyfinger biscuits)
  • Unsweetened cocoa powder for dusting
  • Dark chocolate shavings for garnish

Instructions

    Whisk egg yolks and sugar together until thick, pale, and ribbon-like — about 5 minutes with an electric mixer.

    Add mascarpone to the egg mixture and fold gently until smooth and combined. Be careful not to deflate the mixture.

    In a separate bowl, whip heavy cream to stiff peaks. Fold whipped cream into the mascarpone mixture in three additions.

    Mix cooled espresso with coffee liqueur in a shallow dish.

    Quickly dip each ladyfinger into the espresso — just a quick dunk on each side, do not soak them or they will fall apart.

    Arrange a layer of dipped ladyfingers in a 9x13 inch dish. Spread half of the mascarpone cream evenly over the top.

    Repeat with another layer of dipped ladyfingers and remaining cream. Smooth the top.

    Cover with plastic wrap and refrigerate for at least 4 hours, ideally overnight. Before serving, dust generously with cocoa powder and garnish with chocolate shavings.
